Coffee, Oatmeal & Long Trail Plans

This morning had a pretty lazy start to it but now that I am looking at the clock I realize I have to make this quick and get ready for work.

I made the Hubz and I some oatmeal and coffee to start our day.  In today’s mix there was Scottish Style Oats, chia seeds (which you can now buy in my OpenSky shop), cinnamon, stevia, banana and Justins Chocolate Almond Butter.  I love almond butter and what a treat it was to have some a touch of chocolate with it!

To go with our oatmeal I made some of my favorite Kicking Horse Coffee in my Bodum Brazil French Press which is another item that is available in my new OpenSky store. In my last post I went through my process of making coffee using a french press but if you have any questions let me know!

The Hubz and I spent the remainder of the morning looking over this:

We have been trying to get out and do a few day hikes here and there so we were trying to decide where we would go the next two weekends. This turned into a discussion about where we should go for our week long hike next summer; yes I have been convinced to do a week long hike and I’m pretty excited about it. At this point it is a matter of picking up the supplies that we need over the next 9-10 months.

Late Lunch

I was starving when I got home from work today because oops I forgot my lunch! As I was driving to work it hit me my lunch is sitting at home on the counter, boo!  At work I snacked on a fruit roll up and some pretzels from our snack stash as well as lots of water and cup of tea.  When I got home I was so excited to get some food in my belly and also grateful I get out of work at 2pm.

I have a million things to do this afternoon and then out for a drink with a few girlfriends who are in town from Brooklyn and Denver.  Also reminder my OpenSky Shop opens tomorrow! Can you guess what my first product will be?

Blogging Is Out of the Backseat

HI Bloggies!

The past few days have been crazy with work, yes even this weekend, and blogging has had to take a backseat.  Things are now looking up and I should be back to regular blogging *fingers crossed*.  Well even though I haven’t been blogging I have been documenting my eats and activities to share with you so lets rewind things  to Thursday:

A little break

Don’t worry I won’t be gone for long but I have a huge test this week so I will be hitting the books until I take my first huge test on the 30th.  I will blog if I have the time but unfortunately this week is going to be at crazy at work and I really have to focus on school.  I will be taking a break to relax for our first dinner party at our new place.  It is going to be Asian inspired and will include:

  • Cucumber Salad with Peanuts & Chili
  • Thai Summer Rolls
  • Tempeh Lettuce Wraps with Mango Ginger Sauce
  • Pad Thai

School Update:
My program at IIN is going really well and soon we will receive our Certificate to See Clients, which is really exciting. This certificate signifies that I have been approved by the school to start seeing clients. Now until that time I am practicing health histories which is the first step in the starting the process of working together. So Busy!

I am so busy this week that there is hardly anytime to just sit and relax, however I am making time for it because it’s important to take time for ourselves. Last night the Hubz and I enjoyed a yummy simple dinner of sauteed cabbage, chipotle chickpeas and Salba chips and salsa.  After that we watched Shutter Island which was a pretty crazy movie; I wasn’t sure what to think at first and was just really confused but it really came together at the end. However unfortunately I couldn’t just sit and relax and watch a movie I had a few other items on the agenda to get done like menu planning and updating my Vermont Dining section of the blog and answering a a lot of few emails.

I also did Day 2 of Wii EA Sport Active More Workouts 6 week challenge after work yesterday.  I am loving it so far and there are great features that the original EA Active did not have such as being able to pick your level of difficulty- beginner, intermediate or advanced.  I went with intermediate and it is kicking my butt!  I also love how there is a warm up and cool down that was not really part of the original.  Today is my “rest” day for the program however I am going to make time for a different workout possibly yoga?  We still haven’t located the plug for the elliptical so that is out until we do or maybe I will utilize the bike path that runs behind our place, oh the possibilities! What will you do to be active today?

After a late night I still managed to get up at 5:40 only 10 minutes after my alarm and got right down to business.  I made coffee and got a box unpacked in the kitchen while I waited for it to brew.  Then it was time to finish my David Wolfe module for IIN….still not sure how I felt about it.  What are your feelings on David Wolfe? Have you ever heard/seen him speak? While I worked the Hubz got breakfast together yummy cantaloupe and cereal with goji berries and cranberries!

Moved but Not Unpacked

So the Hubz and I have finally moved into our new place and it is better than I remembered.  The only down falls right now is that our place is filled with boxes that probably won’t get unpacked until this weekend since we both have to work.   Since we have basically no food in our fridge and no desire to cook we headed out for dinner in downtown Burlington and ended up with a lovely glass of red and a Vermont Soy tofu burger, this is my last hurray since I am taking a break from soy.

I know this post is short and sweet but I am off to bed because I have to get up early to head to an out of town meeting that is going to last all day.  Also yes that is mayo on the board behind my tofu burger it is the standard tray of condiments that comes out but don’t worry no we didn’t eat them just the mustard and ketchup.

AHHHH We’re Finally Moving!

Hey Bloggies,

So if you haven’t heard my good news over twitter yet here it is: WE’RE FINALLY MOVING! Yes, we finally found out that we can move into our new condo on Tuesday which is great because living in my parents second living room just isn’t working for us.  It’s been nice staying with them just not their living room as well as driving an hour+ to work every day. I do have some bad news though….my camera battery died- BOOOO- and I can’t seem to find my charger because it’s probably packed up in all of our belongings.  However thanks to my job I have my iPhone so I will be able to take some mediocre iPhone photos until I find my battery charger.

However I have some photos thanks to our rental agencies website of our new place, well not of our place but of other condos in the same complex to give you an idea of what it will look like before it is filled with our belongings.

So these photos are an example of what our place looks like but are not exact.
