Instagram Date Night at El Cortijo

Neil and I have always made date night a priority of ours but ever since we found out that we are expecting it has become even more important.  We are trying to savor the last moments of our life as a family of two, while we prepare and get excited for our future as a family of three. Lately we have been trying to come up with ideas for date night that are things that are more challenging to do with a baby and last night was dining at a new small restaurant, El Cortijo. Now the restaurant wasn’t anything fancy and it was pretty kid friendly but the space is super limited and unless you can secure a booth there is no where to put a baby.

We looked over the menu and quickly asked about the vegan options and were directed to the taco special minus the crema and the vegan taco which was on the menu. We also ordered chips with salsa and guacamole, something I have been craving for weeks. The salsa was nice and fresh and the guacamole was the perfect balance of creamy and chunky.

To go along with our meal Neil ordered a beer and I lusted over the margaritas but ultimately ordered a Rookies Ginger Beer.

We munched on chips and chatted for awhile about work, the baby and our day before finally diving into the tacos, which of course we ate based on the instructions on the menu.

We both ordered one of the specials which had kale and quinoa on it and the vegan Camote taco which was filled with
organic sweet potatoes, braised kale, guajillo salsa, pepitas.  The Camote was our favorite-so good!

Following our dinner we headed over to Baby Gap to take advantage of the sale and picked up a few things for Bebe.  Then we headed home to relax before bed.

I’m Flying High

Goooooooood Morning! I’ve been up since 3am thanks to the kitty who decided he wanted to my extra early wake up call.  He just knew that I didn’t want to miss my flight to NYC this morning even though I could have slept until 4am. Now I’m hanging out at the terminal just waiting to get on my flight so I can head to my IIN Conference.

Even though I had Saturday coffee yesterday I decided to have Saturday coffee this morning to because well it was just too early and too cold not to (I would have had tea but who wants to spend $2 on Lipton?)

Today and tomorrow are going to be crazy busy but I am going to try to blog as much as possible.  Enjoy your weekend!

Exciting Time

I know that I have been a bit detached from all social media this week and my blog and it’s not for a lack of desire but rather a lack of time. As most of you know I wear many hats and currently I have two projects that are taking over my life. It is a really exciting time and I am hoping to get myself back on track and tell you more about everything that is going on. I had given daily blogging a try due to so many requests over the past year and I know that I have been lacking there but I am just wondering what you liked, disliked or would like to see more of?

In other blog related news the Hubz and I will be going away next weekend for our Third Wedding Anniversary and I will have a wedding special and a Fitness Friday Giveaway for you. Lastly, in health coaching news I have finally received my certificate of completion from IIN and I have started in the immersion program. I also am in the process of getting a number of details figured out with a P.O. Box, legal paper work and bank accounts; all things I’m a little late on since I have been coaching for awhile now, oh well they are getting done now. Well I’m off to finish my iced green tea and to purchase a few new notebooks (this is going to drive my husband crazy.) Then it’s off to work and the gym! Also tomorrow is Fitness Friday- any special requests?
