A Cold, Red Curry and A Vacation

I had to take a day off from blogging because I am slightly under the weather.  We had a work meeting yesterday and the place was damp and cold and I came home with a sore throat and a cough.  I hung out in bed all last night and have been lounging around today.  I think my rest, miso soup and fresh green juice has been helping but I’m not 100% yet.  I did get a workout in this morning and a walk this evening with hopes of sweating out some of this cold.

Tonight I made some red curry tonight because what’s better for a cold than something nice and spicy.  Not much of a recipe to tell basically sauteed up some onions and peppers; added the red curry paste; add 2 cups vegan chik’n broth; bring to a boil for 8 min; add bokchoy and a can of light coconut milk; serve over udon noodles.

Now hubby and I are hanging out on the couch with our MacBooks (romantic right) doing some vacation research.  We have almost settled on Costa Rica but are also considering other Puerto Rico and other countries in Central America.  It is a lot of work trying to figure out the place that has everything we want for the right price!

Q: Where is your favorite place to travel?

  1. Oh I’m just dying to get back to Spain. I’m actually going to Puerto Rico next weekend, but Costa Rica is actually higher on my list than PR – everyone who goes has a blast! Feel better!

I am dying to get back to Spain myself – I spent a summer there taking classes back in 2004 and I miss it so much. You should make CR happen it’s so beautiful I wish we could go back but not this year 🙁

Anywhere but here. I’m spending my last college spring break here because I have class and my exit interview 🙁 I’m ready to leave and go anywhere else. Are you feeling better now?

I’m actually going to Costa Rica in August. If you need some tips and advice on Costa Rica shoot me an email!

  4. Your curry looks fantastic. It’s making me hungry.

My favorite place to travel is Latin America. I went to Costa Rica a couple of years ago and it was amazing. If you are looking for beautiful nature and animals, this is the place to go. I also went to Guatemala last year and I loved this place too, but it is more of a cultural travel with of course beautiful scenery such as Lake Atitlan. And in both these countries you can be vegan without a problem. You’ll just eat a lot of rice and beans with veggies (often for breakfast, lunch and dinner) and avocado sandwiches, and fresh fruits that taste so much better than the ones here.

Yes I have traveled to Costa Rica before and I have been wanting to go back for years. Unfortunately after looking at when we can go and everything it doesn’t seem like it is going to work out this year or next 🙁 oh well! Something to look forward to in the future.
